Old Fashioned Oatmeal Cookies - Whole Grain

1 cup of shortening1 cup brown sugar packed1 cup of white sugar2 eggs well beaten1 tbsp vanilla extract1 1/2 cups of Whole Grain Flour1 tsp salt1 tsp baking soda1 tbsp cinnamon3 cups of oats (quaker quick oats or old fashoned DO NOT use instant)1 cup of raisins (optional)
1. Cream shortening and sugars, add eggs and vanilla and beat well.
2. sift flour, salt baking soda and cinnamon.
3. Mix flour mixture with wet ingredients and mix well.
4. Add raisins and mix well.
5. Add oats and mix well. (Add oats last)
6. Spoon out by large rounded tablespoonfuls on to greased cookie sheets. Bake at 350F Bake for 15-20 minutes, remove to wire rack and cool completely.
Serving Size: makes about 2 dozen large cookies
