1 can of kidney beans1 medium onion3 garlic cloves1 tsp paprika1 dash black pepper1 small (green/yellow/red) sweet pepper chopped1 tbs extra virgin olive oil 1tbs celery chopped
Pour olive oil in frying pan. Sautee garlic, onions sweet pepper and celery. Add drained kidney beans and stirfry. Add paprika, black pepper. Stir in tomato ketchup or 1 large tomato chopped. Leave to cook for 5 mins.

I actually have used this recipe numerous times, I leave out the sweet pepper and add some pepper for a kick, I also add plain yogurt and top with lime juice and cilantro. It's a take on an indian recipe, but the contrast of hot/cold and spicy/tangy add a bit of excitement. Try it, you'll love it! - 12/15/08
