Quinoa Taboule

Ingredients
Parsley (2-3 bunches from the market)Quinoa (0.5 cups)Lemon juice (2-3 tbsp)Sage (2-3 tbsp)Tomato (1-2 medium sized)Salt to taste (1 tbsp)
Directions
Cook the 0.5 cup of quinoa in 1 cup of water until the seeds shed (looks like small lumps with a crescent white shell around it) for about 15 minutes.
Wash and cut up parsley into very small pieces.
Cut tomato/s into very small pieces.
Mix everything in a large container and add lemon juice, sage and salt.
