Dried Fruit and Nut Snack Bars

1/2 cup almonds, chopped1/4 cup pumpkin seeds, chopped1/4 cup roasted/unsalted cashews, chopped25 pistachios, chopped10-12 dried pitted dates, chopped1/4 cup sweetened dried cranberries, chopped1/4 cup dried cherries, chopped1/4 cup golden raisins, chopped1/4 cup honey1/2 tsp ground cinnamon1/4 tsp cardamonDash of saltDash of pepper
Combine chopped nuts and fruit in a large bowl and mix with hands. Mix cinnamon, cardamon, salt, and pepper into honey with spoon; add to fruit and nuts. Mix with a spoon until thoroughly incorporated. Press mixture into a 9in X 9in pan sprayed with cooking spray. Refrigerate for at least 1hr or set. Cut the pan in half and then into fourths to make 8-4in X 2in bars. Wrap in plastic wrap and store in fridge.
