Tart Apple Slaw

Ingredients
3/4 cup Greek yogurt 3 tsp Dijon mustard 1 TBSP Honey 1/4 cup apple cider vinegar 1 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/8 teaspoon cayenne 4 cups finely chopped cabbage (about 2 small heads of cabbage) 2 medium sized carrots, peeled and shredded 2 grated Granny Smith apples
Directions
Combine first 8 ingredients in a bowl, stirring to distribute.

Combine the cabbage, carrots, and apple in a large bowl. Stir in the sauce mixture, tossing to combine.

Chill for 30 minutes to allow the flavors to blend.


Serving Size: Makes 5 cups of salad and 4 large meal sized salads.
