Ingredients
4 medium eggs4 cups Swanson Chicken Broth 99% Fat Free1 cup Minute Rice1 tsp dried Parsley1 dash Black Pepper
Directions
Bring chicken broth, parsley, and pepper to boil
Whisk eggs and slowly stir into broth with a fork
Remove from heat
Add rice, stir and cover 5 minutes

Makes 4 servings.

    I make this all the time, but I've never added rice - I'll try that. Try making it "oriental" style by adding a dash of soy sauce & sesame oil , chopped green onions. Yummy. A great rainy day or "sick" soup (a bit high on the sodium grade, but for a once in a while comfort, good stuff. - 2/2/08
