Tomato and Spinach Chicken

Ingredients
2 skinless chicken breast1 can diced tomatoes with juice1/2 package of spinachsalt/pepperonion powder to tastegarlic powder to taste1 slice of bacon2 cups cooked rice
Directions
Mix together tomatoes and spinach.
Place chicken breast on top of mixture.
Season with onion and garlic, salt & pepper.
Lay bacon strip on top of chicken.
Cover with foil and place into 350 degree oven.
Cook until chicken is tender.
Plate rice and put one chicken breast on rice and spoon over with the tomato and spinach sauce.
Serve with a garlic roll. Enjoy!

    When I made this chicken dish, for my low-sodium diet I omitted the bacon and basted the chicken breast with fat-free, low-sodium poppyseed salad dressing, used no-salt-added diced tomatoes, and no added salt. Cooked it on 60% power in my microwave, and served on brown rice. Delicious and healthy! - 12/22/08

    I actually used a can of diced tomatoes that had onions and green peppers and a can of diced tomatoes with garlic and olive oil already mixed together. I did not add any garlic powder or onion powder. I thought it made the chicken taste great. I would make this again. - 5/12/09

    One of my husband's favorite! Super easy. I use canned spinach and no bacon. We add diced italian tomatos and mushrooms. SO good! The spinich comes out not bitter at all. - 11/15/09

    I keep a jar of Hormel real bacon bits just to use when I want the flavor of the bacon but not the calories. You can find it in the grocery store in the aisle with the salad dressings. - 5/9/10

    I'd make this again, but I would add some thick slices of red onion and maybe double the spinach and tomatoes. It was easy to make so I will also probably tweak it was some spices, e.g., basil, until I perfect it to my taste. - 5/10/10

    this was a great recipe and very easy...my husband and kids all enjoyed it...i used long grain and wild rice and realized that I took chicken thighs out of the freezer instead of breasts, but it worked fine...very yummy! - 12/2/08

    I seasoned the chicken (salt, pepper, low sodium soy sauce) which prevented it from being bland, and I used the entire package of frozen spinach + water chesnuts and Great Northern Beans. SO TASTY, but next time I'll cook the chicken on the stove a little before baking the dish, to reduce bake time. - 10/24/08
