Spring Mix Salad with Chicken, Nuts, Fruit (KLBJ)

Ingredients
Spring Mix Salad1 Apple diced into cubes1 4 oz cup of Mandarin Oranges in Water, drained1 oz of chopped or halves pecansChicken Breast from baked chicken or Rotisserie chicken with skin removed
Directions
-Purchase Rotisserie chicken or bake chicken and cut into bite size pieces.
Prepare salad dressing. Great if you are diabetic as well.
Salad dressing: 2 parts Yellow Mustard, 1 part Vinegar, Splenda to taste but no more than one packet and mix well. --Wash and spin (dry) salad.
-Wash apple and cut into cubes.
-Drain the mandarin oranges and tear in half.
-Break the pecans in half

In a mixing bowl, add washed salad, fruit, nuts, and chicken.
Toss salad with dressing and serve.

Serving Size: 4 - 5 1 cup servings or 3 main meal servings
