Slow Cooker Cheesy Potato Soup

16 oz bag refrigerated diced potatoes with onions14 oz can chicken broth, reduced sodium1 small celery stalk, diced or chopped1/2 cup water2 tbsp real bacon crumbles1 tbsp plus 2 tsp all-purpose flour1/2 cup milk1 cup colby jack shredded cheese
In a 2-quart slow cooker, combine diced potatoes with onions, chicken broth, celery, and water. Cook for 5 hours on low or 2 1/2 hours on high, then add bacon crumbles. Cook for 1 hour on low or 30 minutes on high so bacon flavor soaks into soup. Combine flour and milk in bowl until smooth, then add to soup and stir in. Turn slow cooker to high and cook for an additional 20-30 minutes. Stir in cheese just before serving.
This version of this recipe makes 3 servings -- perfect for singles or couples. You could also double it and use a 4 or 5 quart slow cooker to make this for a larger family.
