Basic White Bread

Ingredients
400g bread flour42g whole wheat flour250g water, ~100F1 tsp yeast1 tsp salt
Directions
Mix dry ingredients except yeast.

Mix water and yeast. Let bloom ~50 minutes.

Mix wet and dry ingredients with a spoon, and then knead or mix with bread hooks about 20 minutes. Cover with plastic wrap and let rise in a warm place until double.

Punch down and knead into a ball. Add more flour if necessary. Add to a greased pan, cover with plastic wrap, and let rise until nearly double.

Prehead oven to 400F.

Bake 30 minutes. Then reduce heat to 350F and bake an addition 15 minutes.

Let cool completely before slicing.
