Paulette's Chicken and Veggie Stir-Fry

Ingredients
8 oz. boneless skinless chicken breast, cubed14 oz. pkg. (about 3 cups) frozen oriental stir fry vegetables1 Tbsp. olive oil
Directions
Heat olive oil, add chicken and cook till no longer pink, about 3-5 minutes. Remove from pan, add veggies and stir while cooking, about 10 minutes. Return chicken to veggies, stir and serve over cooked Paulette's Rice Blend. (See separate recipe.)
