Vegetarian Broccoli Cauliflower Soup

Ingredients

Two pounds of fresh veggie mix (Cauliflower and Broccoli caps and sliced carrots)One Large Onion32 ounces of vegetable brothone cup of water1/3 cup of white winetablespoon of herb blendtsp of black peppertablespoon of olive oil2 teaspoons flour (recipe calls for 1/10th of a cup but you really only need a couple of teaspoonse to coat the onions)
In heavy stock pot, heat olive oil on medium heat and add chopped onions. Saute until soft. Add flour and stir until coated.
Add white wine and stir (approx 2 minutes)
Add 32 ounces of vegetable broth and chopped veggie mix, dried herbs and pepper
Bring mixture to a boil
Cover and simmer for approx 30 minutes
Add water, as needed
Use immersion blender or hand mash veggies until purred.
Serving Size: one cup
