Vegetable Beef Soup with Lentils

1lb extra lean ground beef1 medium onion, chopped1 28oz can of crushed tomatoes4 cups of low sodium beef broth1.5 cups chopped carrots3 stalks of celery, chopped3 cloves of garlic, minced1 tsp thyme1/2 cup of lentils (or more if you desire)salt and pepper to taste
In a large soup pot over medium heat, cook the ground beef and onions until the meat is brown and the onions are soft. About 7 minutes. At the last minute add the garlic and cook until fragrant. Add the veggies, tomatoes, broth, lentils and spices and bring to a simmer. Cook for at least an hour, the longer the better.
Alternately, you can brown your meat in a skillet, then throw all your ingredients in the slowcooker and simmer on low for 6-8 hours or high for 3-4 hours.
