Crustless Quiche

Ingredients
6 Eggs1/4 tsp salt (optional)1/4 tsp pepper1/4 garlic powder1/4 tsp onion powder1 cup shredded cheese (I like cheddar)1/4 cup sweet peppers1 cup broccoli
Directions
1. Preheat oven to 350 degrees.
2. Spray a 12 cup muffin pan with non-stick spray
3. Beat eggs 2 at a time until smooth. Add in the remaining ingredients and mix well.
4. Spoon 1/4 cup of the mixture into each muffin hole. The mixture is going to expand a lot while it’s cooking so make sure you leave some space at the top.
5. Bake for 20-22 minutes.
6. Remove from the oven and let them cool in the pan for about 10 minutes.
7. Freeze in a single layer in a gallon sized freezer bag. Warm frozen quiches for ~ 2 minutes in the microwave.
