Gluten Free Black Bean Soup

One pound dried black beans, soaked then cookedOne medium red onion4-5 green onionsOne medium bag frozen sweet corn2/3 pound of bacon, cookedRusset potato, raw1 tbsp chipotle chili powder2-3 garlic clovessalt and pepper to taste
Soak the dried beans about 6 hours. Drain. simmer beans in water in large cook pot for about an hour. Drain. Set aside.
Add onions, garlic and chili powder to oil in a large soup pot. Cook on medium heat until onions are softened.
Add chopped carrot and chopped potato to onion mix. Add more oil if needed (or you can use rice wine, too). Cook just for a few minutes until coated.
Add beans and corn and enough water to more than cover the mixture.
Bring to a boil, then reduce to a simmer. Simmer for about an hour. Season to taste.
Serving Size: makes about 12 one cup servings
