Cajun Fried Rice

2 cups uncooked long grain rice 3 tablespoons vegetable oil 1 medium green pepper, diced 1 small onion, chopped 1 celery stalk, thinly sliced 2 1/4 cups water 1 can (14 1/2 oz) chicken broth, low sodium optional 1 medium tomato, diced 1 1/2 teaspoon salt, optional 1/2 to 1 teaspoon pepper 1 cup cooked pork, cubed
1. In a large skillet, saute rice in oil until lightly browned.
2. Add green pepper, onion, celery; saute for 2 to 3 minutes.
3. Stir in water, broth, tomato, salt and pepper if desired.
4. Bring to a boil.
5. Reduce heat, cover and simmer for 18 to 20 minutes or until rice is tender. Stir in pork, heat thoroughly.

I actually enjoyed the fact that this was quite mild and bland because we had it with cajun blackened salmon so I wanted to be able to taste the salmon and the spices on it. I found the celery and onions pleasantly crunchy and cooked it on a low heat so that the water would absorb more slowly - 10/7/09
