Lori's WOW Curried Turkey Salad

2 tablespoons low- or no-fat sour cream2 tablespoons plain yogurt (Greek yogurt adds more protein)1 tablespoon fresh lime juice1 tablespoon honey1 teaspoon curry powder¼ teaspoon salt¼ teaspoon freshly ground black pepper, or to taste2 cups chopped cooked turkey1 cup seedless red grapes, cut in half½ cup chopped celery¼ cup chopped red onion2 tablespoons (or more!) roasted cashew pieces (can also substitute pistachios or almonds, if you like)
Combine first 7 ingredients in a large bowl (through the black pepper). Add turkey, grapes, celery, onion and cashews. Stir gently to combine. Makes 4 servings (serving size about 1 cup – about 310 calories).
You can easily double the recipe – just make a little more of the dressing.
Tastes great served on a bed of mixed greens and/or with mini pita rounds.
