Peggy's Taco Casserole

Ingredients
2 cups shredded mexican cheese1/4 cup shredded cheddar cheese1 pound lean ground beefi can mild Rotel1 packet taco seasoning (40% less sodium)66 grams raw onion1 cup red pepper1/2 cup black beans
Directions
brown beef, add taco seasoning, set aside. Cook onions, peppers until soft, then add beef and other ingredients EXCEPT cheese until heated thoroughly.

then put in bottom of casserole dish, cover with cheeses, and bake at 450 until cheese melts

Serving Size: makes 12 1/2 cup servings
