Pampered Chef Curry Chicken

Chicken Breast, about 2 lbs., cut into 1 inch chunks, cooked1 onion, halved then sliced2-3 large carrots, peeled and sliced on the bias1 can coconut milk1 C couscous cooked according to directionscilantro, chopped
chop chicken into 1 inch pieces, cook until done. Set aside.
Halve onion, then slice to make half moons. Slice peeled carrots on the bias. Add to pan that chicken was just in. Cook about 5 min until crisp-tender. Add 1 can coconut milk, 2 tsp curry powder, chicken to skillet and cook until thickened (about 7 min)
Add cilantro to hot, cooked couscous and stir.
Add 1/2 C of couscous to plate, server curry chicken over top.
