Beet Salad

Ingredients
Three 12 ounce cans sliced beets5 tablespoons extra virgin olive oil4 oranges3 cloves of garlic, diced1/2 cup diced parsley1/2 cup diced mint1 tablespoon balsamic vinegar1/2 cup chopped pecans
Directions
Saute beets in 3 tablespoons of the EVO and let come to room temperature.

Slice all other ingredients in bowl.

Add 2 tbsp. of EOV and 1 tbsp. balsamic vinegar to chopped ingredients.

Great salad! Especially after it sits a day.
