1 1/4 cups ground almonds 3 tablespoons all-purpose flour 1/2 cup brown sugar 3 large egg whites 1 dash almond extract 1/3 cup unsalted butter, melted and cooled, plus extra for greasing
1.Preheat the oven to 375 F.
2. Butter 24 rectangular moulds.
3. Stir the ground almonds, flour and brown sugar together.
4. In a separate bowl, whisk the egg whites only until they are foamy.
5. Add the whites to the almond mixture and stir until blended.
6. Add the almond extract and stir in the melted butter.
7. Spoon the batter into rectangular moulds and bake for about 15 minutes, until you can put in a toothpick and it comes out relatively clean.
8. Cool then remove from moulds.
Serving Size: makes 24
