Chicken Curry

Ingredients
8 ounces uncooked chicken breast -- diced to bite-size2 tomatoes -- diced1 sweet onion -- diced3 cloves garlic -- minced1 cubic inch ginger root -- minced1-2 T curry powder (depending on your preference).5-1 T olive oilWaterSalt to taste
Directions
Heat oil in pan. Add onions and saute until soft. Add ginger and garlic. Saute approx. 1 min. Add curry powder and stir. Add a few tablespoons of water to make a watery paste. Add tomatoes, chicken, and salt, cover and cook 5-10 minutes. Add more water if necessary to make a sauce. Recover and cook until chicken is done and tomatoes are mostly cooked down into the sauce. Serve with rice, if desired.
