Easy Vegan Gravy

3 tbs vegan butter2 tbs finely chopped onions2 minced garlic cloves3 tbs whole wheat flour2 tbs soy sauce1 cup watersalt and pepper to taste
1. Put the butter in a pot and saute the onions and garlic over medium-high heat.
2. Reduce the heat back to medium after the onions and garlic have become golden brown.
3. Make a roux by gradually adding the flour, while continuously stirring the avoid lumps.
4. Still stirring, add soy sauce and water to the mixture.
5. Add salt and pepper to taste and continue to cook until the gravy has reached the desired thickness.
Serving Size: Yields 2 cups, or (6) 1/3 cup servings
