Asparagus Quiche (adapted souffle recipe)

1/2 small vidalia onion1 tsp butter1# asparagus3oz sharp cheddar 1/4" diceS&P12 egg whites
Saute 1/2 small onion (diced) in 1 tsp butter; set aside. cook asparagus in large skillet in 1" of boiling water for 3-4 minutes; set aside to cool. Once cool slice asparagus into 1/2" pieces.
Coat Texas muffin pan w cooking spray. divide chopped asparagus into six cups, sprinkle cooked onion over asparagus and dot with diced cheddar, season w S&P.
Blend 12 egg whites w emulsion blender; divide evenly in six cups. bake at 375 for 20-25 minutes or until golden.
Serving Size: makes 6 10oz quiches
