Cornmeal Griddle Cakes

Ingredients
1 1/2 c. cornmeal1/4 c flour1 tsp baking soda1 tsp salt1 tsp sugar2 c buttermilk2 tbls oil1 egg separtated
Directions
Mix dry ingredients together. Add buttermilk and egg yolk. Mix thoroughly. Beat egg white until stiff peaks form and fold into buttermilk mixture. Let stand 10 minutes.
