The Darlas' Ratatouillle

Ingredients
Heat 1/4 cup olive oil; add 2 cups chopped onion; 4 cloves of garlic (finely chopped); a large green and a large red pepper; zuchini; eggplant; tomatoes (fresh and canned);bay leaf (can be left whole, use 3-4), oregano, marjoram; red wine and capers. Bring to simmer, cook until all ingredients have softened and juices are reduced. Finish by folding in fresh chopped parsley. Salt and pepper to taste.
Directions
Combine all the ingredients. Allow flavors and natural "gravy" to develop during slow simmer. Stir as needed to blend and keep watch over everything. Might be a good candidate for a slow cooker, but that needs to be tried and tested.
