Summer Baby Green Pasta Salad

Ingredients
3 cups Organic Baby Spinach and Arugula Mix1 cup cooked whole wheat rotini 1 roman tomato diced1 cucumber peeled and sliced1 tbsp. capers, drained1 tbsp. balsamic vinegar1/2 tbsp. olive oil1 tbsp. shredded parmesan cheese
Directions
Boil pasta in salted water according to package directions. Drain and let cool

In a medium salad bowl, combine pasta, baby greens, tomatoes, capers, olive oil, vinegar. Toss well then add parmesan cheese.

Serving Size: makes about 1 serving..about 4 cups
