Quinoa and Black Bean Salad

1-1/2 cups quinoa1-1/2 cups black beans, (rinsed and drained)1-1/2 tablespoons red wine vinegar1-1/2 cups Corn Fresh (about 2 ears)3/4 cups chopped green bell peppers (can use red and green)2 pickled or 1 whole fresh Jalapeno, chopped and seeded1/4 cup finely chopped cilantroDressing: 5 tablespoons fresh lime juice 1 teaspoon Salt 1-1/4 teaspoon ground cumin 1/3 cup of Olive Oil
In sauce pan, place quinoa in pan with salted water and cook for 10 minutes, rinse under cold water, drain in sieve, place sieve ontop of sauce pan with water cover with lid and bring to boil and cook for 10 minutes more until fluffy.
put in bowl add black beans and red wine vinegar and mix. add corn,bell pepper,jalapenos and cilantro
mix dressing as follows: in small bowl at lime juice, salt,cumin and olive oil, mix well and pour on salad and refrigerate for 1 hour. Serve
