simple chicken soup

Ingredients
Red Onion Raw 0.5 cup shallot, 2Garlic, 2 clove Baby Carrots, 10 Celery, raw, 3 stalks with leaves*Potato, raw, 3 medium 4 roma tomatoes4 Chicken Thighs
Directions
dice all veg put into a crock pot with your choice of liquid (chicken stock, veg stock, water)
skin chicken thighs but keep the bone, it will add flavor to the broth
cook on high 3-5 hours salt and pepper to taste
