Easy Turkey Meatloaf Cups

1.25 lbs Extra lean ground turkey1 large egg1 onion, chopped1 cup low fat milk1 cup bread crumbs1/2 cup chopped fresh parsley1 large carrotSalt and Pepper to taste1 Tbsp brown sugar2 Tbsp prepared mustard1/3 cup ketchup
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a muffin tin.
Combine turkey, egg, onion, milk, bread crumbs, parsley, and carrot in a large bowl. Season with salt and black pepper. Distribute mixture evenly into muffin tin(s). Mixture will make 16 meatloaves.
Stir together brown sugar, mustard, and ketchup in a small bowl. Pour over meatloaves.
Bake in preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (70 degrees C).
Serving Size: Makes 8 servings of 2 mini meatloaves (16 total)
