Adam's Organic French Onion Soup

Ingredients
Ingredients:Onions, raw, 3.5 large sliced thinGarlic, 3 clove chopped fine*Flour, white, .25 cup *Earth Balance Natural Buttery Spread, 2.5 tbsp *Cooking Sherry, 8 tbsp Bay Leaf 1 wholeWater, tap, 8 cup (8 fl oz) Salt, 1 dash Pepper, black, 1 dash Thyme, fresh, 1 tsp Parsley fresh, 2 tbsp *Better than Bouillon Beef Base - organic, reduced sodium, 6 tsp *Better Than Bouillon Chicken Base, Organic, Reduced Sodium, 5 tsp
Directions
Add Earth Balance to pot, slow cook Onions and garlic until lightly golden, add bay leafe, add 1/4 cup flour and stir. Immediately add 1/4 cup of good cooking Sherry (the real stuff, not Holland House, its full of sodium). reduce till almost incorporated. Add 64 oz water and better than Boullon organic beef and chicken base, salt and pepper to taste. Let simmer until onions become tender, add another 1/4 cup of the cooking sherry. Top with swiss cheese and croutons if so desired or just enjoy as is.
