8 oz. Laura's Lean Beef - ground beef1 tbsp olive oil1/2 onion, chopped1 stalk celery, chopped1 sm can mushrooms8 oz baby carrots1/4 cup frozen peas1 tbsp gluten free soy sauce4-5 generous shakes Ozark seasoning2 shakes Chef Paul Prudhomme's Seafood Seasoning2 shakes garlic powder2 cups leftover mashed potatoes
pre-heat oven to 350 degrees
saute onions & celery in olive oil, set aside
brown ground beef
add back onions & celery
add carrots, mushrooms, peas, soy sauce & spices
add some water, cover, simmer for 5 minutes
warm up the leftover mashed potatoes and stir to break them up
pour simmering ingredients into a baking dish
spread mashed potatoes over the top
bake for 30 minutes
