1/2 C canola oil1 C unsweetened applesauce1C Splenda for Baking (if using sugar, use 2 cups)3 eggs2 tsp vanilla extract2 tsp baking soda2 tsp cinnamon1 tsp salt2 C whole wheat flour2 C shredded carrots1/2 C crushed pineapple1 C chopped walnuts
Mix all ingredients together. Pour into greased 9x13 pan and cook about 45 minutes at 350. Top with your favorite frosting (I use cream cheese frosting, but haven't come up with a sugar free one yet). Makes 24 pieces.
