Heather's Black Eyed Peas

Ingredients
1 lb. dried black eyed peas1 large onion3 cloves garlic1 ham hock
Directions
soak beans overnight or do quick soak according to package directions.
Rinse beans in colander.
Saute onion and garlic in butter in the pot for the peas. Add pease and ham hock. Add some Tony Cachere's seasoning (not included in nutrition info) to taste. Simmer on med/low for 2 hours OR after sauteing onion/garlic, add all ingredients to a greased crock pot and simmer for 8 - 9 hours on low.
Makes 8, 133 calorie servings with almost 7 g. protein each!

    This is how I make them, only I use fresh peas when they're in season and I use bacon 1/2 of the time, whichever I have on hand. This is really all a person needs to make great blackeyed peas! - 9/28/11
