Challah French Toast

4 slices day old challah (calc is based on 1/2 inch slices of Beigel's brand)2 fresh eggs1/3 cup egg substitute (I used egg white)1 Tbsp vanilla extract1 Tbsp Half and Half (could sub water or FF milk)2 small pats butter or Pam
Beat the eggs till well mixed. Add egg substitute, vanilla, and half and half and beat till well mixed.
Soak each piece of challah in the egg mixture on both sides.
Preheat skillet. (If you're using a non-stick pan, you can remove or reduce butter.) melt butter, and then cook each piece until lightly browned.
Serving Size: Makes 4 slices French toast - 2 per person
