Quinoa pilaf with goat cheese and spinach

1/2 cup quinoa (3 oz.)1 tbsp. olive oil2 tbsp. pine nuts1 clove garlic, minced2 cups baby spinach (2.5 oz)3 oz. goat cheese, crumbled1 tsp. lemon juice
Bring 3 cups salted water to a boil; add quinoa and cook for 20 minutes. Drain and set aside to cool.
In a saucepan over medium heat, heat olive oil. Add pine nuts and cook, stirring constantly, for 2 minutes. Add garlic. Remove from heat and add spinach, cooled quinoa, lemon juice, and 1.5 oz. goat cheese. Stir to combine; goat cheese should melt somewhat. Sprinkle remaining goat cheese over top.
Serving Size: Makes 2 1-cup servings
