Cucumber Curry

Ingredients
1/2 Cup Water115g/4Oz. Creamed Coconut1/2 tsp Turmeric1/2 tsp salt (or to taste)1/2 large English Cucumber, cut into small pieces1 large red (bell) pepper, cut into small pieces50g/2 Oz. salted peanuts coarsely crushed4 Tbsp Canola Oil2 Dried Red Chillies1 tsp Cumin seed1 tsp Mustard seed4-6 Curry leaves4 cloves Garlic, crushed
Directions
1. Boil water in a heavy saucepan, add coconut, turmeric, salt, and sugar. Simmer until coconut dissolves to obtain smooth thick sauce.
2. Add the cucumber, red (bell) pepper and peanuts and simmer for about 5 minutes.
3. Heat oil in small frying pan, fry the chillies, cumin and mustard seeds until they start to pop. Reduces heat and add the curry leaves and garlic and fry. Pour over cucumber mixture and stir well.

Serving Size: Makes 4 servings or 8 side dish servings (half the calories)
