Roasted eggplant with carrots

Ingredients
- 1 eggplant- 1 bell pepper- 2 carrots- 1 onion- 3 cloves garlic- salt- rosemary- basil
Directions
Slice carrot and cook it in water until soft.
Roast diced onion and sliced garlic on a bit of oil.
Add diced bell peppers until they are slightely cooked.
Add eggplant and roast until soft.
Add cooked carrots.
Add salt, rosemary and basil as much as you like.

Serving Size: Serves 6 people.
