Tomato free salsa

Ingredients
Half a red Onion, chopped finely1 Red Bell pepper, finely shopped1 Green Bell pepper, finely chopped1 head of garlic or 5 cloves, minced1-2 mango's, finely choppedlime juice to tastefinely chopped cilantro to tasteJalapeno peppers to taste, usually 1-3, mincedChopped fresh pineapple, equivalent to a small can of pineapple
Directions
Makes 12 servings or more, just finely chop everything and blend. I often use the Tupperware quick chef manual chopper to get the pieces fine enough. Flavorful salsa, you control the heat. Tastes great on baked fish, baked potato, with a few nacho chips, in stews, or in home made pizza sauce.

    wow..I did a search for tomato free salsa recipes, and the recipe at the top of the list led me here! I've been wanting to make some salsa for a while but had resigned myself to doing without it since 'all things tomato' cause swelling in my feet, ankles, & legs..I cannot WAIT to try this! - 5/27/11
