Black Bean Soup

Ingredients
2 Cans Hunts Diced Tomatoes - Plain or Flavored4 Cans Bush's Black Beans - Drained But Not Rinsed1 Cup Baby Carrots - Sliced8 Ounces Baby Bella Mushrooms - Diced2 Medium Sweet Onions - Diced2 Medium Bell Peppers (Red or Yellow) - Diced24 Ounces Beef Broth10 Slices Hardwood Smoked Bacon - Diced
Directions
Cook diced bacon over medium heat until it starts to brown.

Add diced onions and saute until they become translucent.

Add carrots, mushrooms, and peppers stir well and let cook for 5 minutes stirring occasionally.

Add drained black beans and tomatoes and stir well to mix. Cook for 5 minutes stirring occasionally.

Pour in beef broth and bring to a boil.

Cover and lower heat to simmer for one hour to ninety minutes.
