PRETTY. EASY. BLACK BEAN AND SWEET POTATO CHILI

1 tablespoons Olive Oil1 medium onion finely chopped2 medium celery stalks finely chopped3 medium garlic cloves finely chopped1 teaspoons ground chile powder1teaspoons ground cumin1 teaspoon dried chipotle chile powder 16 oz can diced or crushed tomatoes1 1/2 cups water or low-sodium chicken or vegetable broth1 pounds sweet potatoes medium dice (about 2 cups)2 (15) ounce cans black beans, rinsed2 Tablespoons flax seed is optional.. I just add it to everything.Green onions chopped (optional) for garnish
finely dice the celery and onion.. saute in the olive oil until softened.
Add in the Garlic, chili powder and cumin. Saute another minute until fragrant.
Stir in the stock, tomaotes and potatoes. Simmer on low for 30-35 minutes. Add the beans. Serve with the green onions on top.
Serving Size: Makes about 8 one cup servings.
