Thai Quinoa Salad

Ingredients
Dressing1/4 cup Lime Juice 2 1/2 teaspoon Fish Sauce1 1/2 Tablespoon Extra Virgin Olive Oil1 Tablespoon Sugar1/4 Teaspoon Crushed Red Pepper (or to taste)Salad1 Cup (dry) Quinoa1 medium Red Bell Pepper - chopped1 medium Carrot - diced1/2 English Cucumber - seeded and chopped2 Scallions - chopped1/4 cup fresh Cilantro - chopped2 Tablespoon Mint or Basil (optional)
Directions
In a small bowl, whisk the dressing ingredients together, set aside.
Bring the quinoa to a boil with 2 cups water and 1/2 teaspoon of salt. Turn to simmer and cover for about 15 minutes or until the water is almost absorbed. Turn heat off and let sit for 5 minutes. Transfer to a bowl and allow to cool completely.
While quinoa is cooling, chop all vegetables. Add vegetables, herbs and dressing to quinoa. Toss and enjoy!
