Tamarind Rice - Also known as Pulihora

10 cups of cooked Balsamic rice (or other rice type as preferred) (10 oz or 300 g of uncooked rice yields 10 c)1/2 c Almonds1/2 c peanuts (preferably with the red skin still on)1/2 c cashews raw6 tsp of vegetable oil7 T of Pulihora Paste (buy from Indian Store; by Priya)1/4 tsp of Turmeric powder1 pinch of Asafoetida Powder (compressed)2 pinches of cumin seeds3 pinches of mustard seeds2 pinches of greek seeds4 healther pinches of split peas8 dried red chilli peppers4-8 mild [green/large] chilli peppers (fresh)12-20 Curry Leaves (be generous - don't hold back here)Salt
Prepare 10 cups of cooked rice separately;
Spread the rice out in a large dish to allow rice to cool down;
Add Tamarind mix - blend well into the rice;
Salt added 'to taste'

Combine dry spices and seeds and add to heated oil
Add Nuts (cashews last)
Fry all remaining items (total frying time to be no more than 6 minutes duration)
Add mixture to the rice and blend well
Serving Size: Makes ten 1-cup servings
