Ingredients
1 cup refried beans1 teaspoon taco seasoning mix12 eggs2 tortillas, corn or flour, torn into bite-size pieces1/4 cup shredded cheddar cheese1/4 cup salsaAdditional Cheese, Sour Cream, Guacamole, Crushed Tortilla Chips, sliced green onions (optional)*
Directions
1 - In a small bowl, mix beans and taco seasoning. Set aside.

2 - Spray a medium skillet with non-stick spray and heat over MEDIUM-HIGH heat until a drop of water bubbles and quickly evaporates.

3 - Whisk eggs. Pour into heated skillet. Stir occasionally until eggs begin to set. Add refried beans and torn tortilla bites. Continue to cook and stir until eggs are fluffy and just set. Top with shredded cheese and cover until cheese is melted.

4 - Serve with additional cheese, sour cream, guacamole, crushed tortilla strips, and chopped green onion if desired.

** Omit tortillas to save 10.7 grams of Net Carbs per serving.
