Eggs over Brussel Sprout Hash

Ingredients
Spinach, fresh, 20 grams choppedScallions, raw, 5 grams choppedRaw Tomato (Medium, whole), choppedBrussels sprouts, fresh, 85 grams choppedEgg, fresh, whole, raw, 1 large (remove)Egg white, fresh, 1 large (remove)
Directions
1. Fry Sprouts and onion for 2 to 3 minutes until softened.
2. Add Tomato and spinach, continue frying for 1 to 2 minutes.
3. Fry one whole, egg and the white of a single egg.
4. In a plate, put veggie mixture and rest eggs on top, using the yolk as a sauce.
Season to taste.
