Slow Cooked Low Fat Lentil Curry

Ingredients
1 cup red lentils1 onion2 cloves garlic1tsp ground turmericpinch of sea salt1 tsp cumin1 - 14.5 oz. can chopped tomatoes2 cups boiling vegetable stock1.5 cups shredded carrots1 lime1 bay leaf
Directions
Rinse the lentils

Finely chop the onion and garlic

Add to the slow cooker along with the remaining ingredients

Cook for 2-4 hours on high.

Serve with naan bread. I like with brown rice.
