Chicken Curry with Cauliflower

2 lb boneless chicken breast cut into 3 inch pieces1 onion, thinly sliced2 T cornstarch4 t curry powder3/4 t ground turmeric1/2 t salt1/2 large head cauliflower cut into florets2 cloves garlic, minced1.25 c plain Greek yogurt1/4 c chapped fresh parsley
Stir together chicken, onion, cornstarch, curry powder, turmeric, and salt in a slow cooker.
Add cauliflower, garlic, and 1/3 cup water.
Cover and cook on low 5 to 6 hours or until chicken is done.
Remove 1 cup cooking liquid from slow cooker.
Stir together 1 cup cooking liquid, yogurt, and parsley.
Add yogurt mixture to slow cooker.
Stir until blended.
Serving Size: makes 6 servings
