5 eggs seperated1 c sugar1/2 tsp vanilla1 tsp baking poweder1 1/2 c flour12 oz can evaporated milk14 oz sweetened condensed milk1 c whole milk1 1/2 c heavy cream1/3 c powdered sugar1 tsp vanilla
Preheat oven to 350 degrees. butter a 9" x 13" baking pan. In a mixing bowl beat egg yolk, sugar, and 1/2 tsp vanilla on high speed until light and fluffy. In another bowl, beat egg whites to soft peaks. using a rubber spatula, fold whites in to yolks until almost combined. Gently fold in baking powder and flour (do not overmix). Spread batter in prepared pan. Bake 30 minutes until golden and pulling away from the side of the pan, or toothpick comes out clean. cool for 20 minutes and pierce all over. In medium bowl wisk together the three milks. Pour evenly over the cake. cover wiht plastic wrap and refrigerate for at least 1 hour and up to 1 day. To serve, whip heavy cream to soft peaks. Add powedered sugar and 1 tsp vanilla. Spread over cake.
