Slow Cooker Apple Maple Pork Tenderloin

1 lb pork tenderloin2 cups baby carrots2 cups baby potatoes (could do sweet potatoes as well)1 apple, sliced2 tbsp. soy sauce1 tbsp. Dijon mustard1 tbsp. balsamic vinegar1 tbsp. maple syrup1 clove garlic, crushed
Place baby carrots and potatoes in the bottom of a slow cooker,
followed by the pork tenderloin, and then the apple slices.In a small bowl, combine soy sauce, Dijon mustard, balsamic vinegar, maple syrup and garlic.Pour over top of the contents of the slow cooker. Cook on low for 68 hours.
