Black bean enchilada casserole

Ingredients
2 cans Black Beans, rinsed1.0 can yellow Sweet Corn, rinsed1.0 cup dry quinoa (cook according to pkg)2.0 cup, shredded Cheddar Cheese2.0 cup red Enchilada Sauce2 bell pepper, red/orange, chopped1.0 chopped Onion1.0 tbsp Olive Oil3 cloves garlic, minced1 tsp cumin2 tsp cilantroJuice 1 lime1 tbsp chili powderDashes of cayenne pepper
Directions
Saute onion and garlic until soft, 5 min Add peppers and corn, cook 3 min more Add seasonings Mix together beans, sauce, and veggies with 1 cup cheese. Pour into 9x13, top with remaining cheese. Bake uncovered 30 minutes
